Happy Birthday at Sunshine School!

AK took birthday treats to school on Thursday to share with the friends in her class.

Here she is (with SK, who got to come over from her class) giving a big smile, or waiting for her cookies, whatever, we got a smile out of her :)!

Sporting her crown and a BIG lollipop cookie. I did not intend for the cookies to come out so big, but they are the Cake Mix cookies, which are super easy - see recipe below, and they literally grew in the oven!

All her friends! We have talked about AK's birthday since right after Christmas. Every time we would ask her who is coming to your party, she would say "Jacob and Genty." Jacob is sitting next to AK, and Ann Gentry is sitting next to Jacob. They are her very special friends at school. Jacob's mom was also SK teacher two years ago, and he and AK were born 5 days apart!

This one's for you P.J.R! Always a half-n*ked Fox in our blog! Ha! I was so afraid AK would get red gel frosting on her shirt, she ate topless! And, I'm proud to say was the ONLY child to finish her ENTIRE cookie!!! :)

Cake Mix Cookies
ANY flavor of cake mix
1/3 cup oil
2 eggs

*Mix together and bake at 375 for 6-8 minutes. DO NOT overbake. They will not look done, but they are at 8 minutes.
*Some of our favorite variations are: Red Velvet cake with Cream Cheese Frosting; Dark Chocolate Cake mix with White Chocolate Chips added in; and Strawberry Cake Mix with white chocolate chips or cream cheese frosting.
These cookies are sooooo yummy!
